Happy Monday everybody! I’m sure most of you are counting down the minutes until you get some well-deserved time off this week, so let me give you something sweet to look forward to as you’re kicking off the holidays :)
If you need a quick and delicious holiday dessert recipe, whether it’s for your family dinner or a holiday party, I’ve got a great one that won't disappoint. My best friend (and photographer!) Jon Volk introduced me to this amazing pumpkin roll recipe- apparently his family makes it every year! We never had a pumpkin roll in my Kurdish Thanksgivings at home, so I might bring it to the table this year. Enjoy!

Directions:Step 1: Preheat the oven to 375° F. Line a 15x10-inch baking pan with parchment paper, then grease and flour the paper. Step 2: Combine the flour, baking powder, baking soda, cinnamon and salt in a small bowl. Beat eggs and sugar in a large mixing bowl until thickened. Beat in pumpkin. Slowly stir in flour mixture. Spread evenly into the baking pan.
Step 3: Bake for 13-15 minutes or until top of cake is spongey when touched. Immediately loosen cake form the power and very carefully turn the cake onto a prepared clean towel. Carefully peel off the paper. Roll up the cake and the towel together, starting with the shorter end. Cool on a wire rack.
Step 4: For the filling: Beat cream cheese, powdered sugar, butter and vanilla in small mixing bowl until smooth. Very carefully unroll your cake and remove the towel. Spread cream cheese mixture over cake **make sure your cake is cooled first!** Roll up the cake again. Wrap in plastic wrap and refrigerate at least one hour so that the filling and the cake have time to set.
Be sure to refrigerate this when you store it; it locks in the moisture and makes a delicious cold treat for later (Stevie likes it with his morning coffee.) Let me know how you like it! #SazanInspired Happy almost Thanksgiving fam! :) Photography credit: Jon Volk
