Happy Friday! Whether it's breakfast tacos, beef tacos, taco salads or leftover tacos - I'll never get tired of having TACOS. If you're looking for a recipe that's delicious and easy to whip up at home, then try my famous ranch chicken tacos. They're not actually mine - I got this recipe from my sister-in-law who got it from her momma and so forth. It's seriously a Hendrix family favorite! Best of all, I can make this in my crockpot on those busy work days. It does all the work for me. Let's get started!Ingredients:2 lbs chicken breast (I like using organic free range chicken!)4 oz Good Seasons Zesty Italian dressing (buy the powder mix version in the dressings aisle. They also have one that comes with the salad dressing bottle and I recommend just getting that and following the instructions for the dressing- so easy!!)1/2 Tbsp minced garlic1 Packet ranch dressing powder mix1/2 Cup of water1/2 Tbsp chili powder1/2 Tbsp ground cuminDirections:Ready for the easiest part? Place all the ingredients above in a crockpot. Cook on high setting for 4-6 hours or on low for 8 hours. Then, with a fork shred the chicken (it will be super tender!) Feel free to serve over a salad, burritos, flour tortillas (I love the gluten-free ones!), hard shell tacos, etc. Get creative!Optional Toppings: Shredded Mexican cheese, sour cream, Salsa, and/or sliced avocado to make it extra delicious :)Whether you’re having a crazy week with no time to cook, or you’re having a big group of people over, this recipe is so perfect.
